Two days ago, I made homemade spaghetti sauce again, baked some tomato skins and fried some squash. It was lovely. And spicy!



Last night, I made soup and hot chocolate. It was perfect for a very cold evening watching The Office wedding.

Tonight I plan on making an even bigger pot of soup to last me throughout this weekend. Perhaps I'll make some cornbread, too.

Tonight, I have to write a four page paper. I was out of class by 2:15 today. That means that I waited until eight o'clock to write the paper...

And I also decided to make homemade spaghetti sauce. It was just a basic recipe. I think I overdid it on the garlic, though, so I added some cayenne pepper. Gotta love that spice!

Oh, and I still haven't finished the paper, but I am going out to the bars to celebrate a friend's birthday right now. Ahh...now, I am living the college life. It only took me three years to reach this point.

Carb Overload

After yesterday's excursion with tomatoes, I realized today I was lacking vegetables in my apartment.

"What to eat?" I asked myself.

Well, there was still cornbread from yesterday, so I chopped some up, put honey and soy milk on it and, tada, breakfast and lunch. Mondays are my long days at school, so breakfast and lunch have to be quick.

Tonight for dinner, I baked three small potatoes and had a small dish of (prepackaged) apple cinnamon oatmeal.

When I got out of class at nine, however, I really wanted to let off some steam from various personal issues. Dinner rolls, I decided, would be the perfect food to make to take my mind off of everything and let me punch the dickens out of something.

I decided to bake sweet rolls. My, did they turn out wonderfully! I hope they will stay fresh long enough for them to taste terrific at work tomorrow!

The crappiest part about being extra motivated to cook only when I'm single is the fact that I have no one to share the fruits of my labors with. My coworkers are the closet things I have to a family or boyfriends.

Tomatoes!!

Tonight, I oven-roasted two tomatoes and used the innards to fill-out a black bean soup.

I used cayenne pepper to ate some spice to the soup. Basil was added to both dishes. Parmesan added the finishing touch to the roasted tomatoes.

Also, as a perfect compliment to the soup, I baked some plain cornbread today.

I ate all of these things alone, and they constituted my only meal today.

Well, how to begin... I tend to cook a lot more when I am single. Technically, I have been single since August of 2008, but it was only until this past August when I suddenly began cooking a lot more. Long story...

Here is what I have cooked so far during this single period:

July 31st: Couscous for breakfast (this was a common trend, so I will not repeat all of the occurrences)

August 19th: Toast (for sustenance while reading Return of the King)

September 6th: Hard-boiled eggs

September 11th: Baked potatoes

September 13th: Cornbread

September 23rd: Chocolate cake

September 25th: Homemade bread and homemade guacamole

September 28th: Apple crisp

September 30th: Applesauce spice cake

Those are the only dishes I made that I mentioned in my twitter account. Expect me to make many more dishes as the season goes on.
